Cheesy Pepperoni Pizza Quick Bread
What you need
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 large eggs
2 tablespoons extra virgin olive oil
3/4 cup buttermilk
1/4 cup shredded Parmesan cheese
1 1/2 cups shredded Mozzarella cheese
1 cup quartered pepperoni slices, about 32 slices
1/2 cup marinara sauce
1 teaspoon Italian Seasoning
1/4 cup shredded Parmesan CheeseHow you make it
-Preheat oven to 350F and spray a non-stick baking sheet with the greasy stuff.
-Mix flour, baking powder, baking soda, salt & pepper with an electric mixer (or by hand if you’re the Hulk).
-Slowly add in eggs, oil, buttermilk, Parmesan cheese, pepperoni quarters and mozzarella until combined.
-Pour half of your batter into an oiled 9x5x2 pan and top evenly with marinara. Pour the remaining batter over the sauce.
-Top with your Italian seasoning and Parmesan cheese.
-Bake for 45 to 55 minutes, or until you can poke it with something slider, sharp and wooden (probably a toothpick) and it comes out clean.
-Cool for 30 minutes before attempting to remove from the pan—unless of course you like crumbs.
Serves up to eight greasy Guidos.
